The Migoti washing station operates in a region referred to as Migoti Mountain, in Mutambu Commune of Bujumbura Province, 30 km from the centre of Bujumbura. The washing station was built by the Migoti Coffee Company in 2016 to support coffee cherry purchasing and processing with the farmers in the region. An investment that has enabled farmers to produce higher quality coffee and gain access to higher premiums and international markets.
The washing station is operated by a local team of ten permanent staff and over 250, mainly women, temporary workers who are employed during the coffee season from March to June. Migoti Coffee Company also assists farmers in good farming practices such as pruning and properly caring for coffee trees, intercropping, planting shade trees, utilizing green fertilizers, stabilizing soils and naturally controlling pests. The expectation is that by following best farming practices the farmers can increase the yields from their coffee trees by five-to ten-fold.
This particular lot of coffee is grown by a selection of smallholder farmers within the Migoti mountains, each with as little as 5 hectares of land. The coffee is a Red Bourbon, an Arabica variety very common in Burundi known for its medium yields and superb cup quality of high sweetness and bright acidity. Once picked coffee is delivered to the central washing station where it is processed using the Fully Washed method. Coffee cherries are washed and floated to remove any under or over ripe cherries before being pulped to remove the outer skin. The resultant parchment is then fermented to remove the sticky surrounding mucilage before being washed and sent to be dried. Wet coffee is dried in the sun on raised beds made from wood and netting, designed to enable air to gently circulate around the seeds. It takes around 28 days for the coffee to dry in the sun and must be turned frequently throughout the day and covered overnight to ensure evenness when drying.
Processing the coffee using this method enhances the brightness in the Red Bourbon variety and brings out a clean, citric sweetness. This results in a distinctive green apple and lime flavour in the cup which is complemented beautifully by deeper notes of chocolate and black tea. This coffee demonstrates a classic profile for Burundi and truly showcases the meticulous work done by the Migoti washing station and the producers in the Migoti mountains.
